During a visit to South Pond Farms in the Kawartha’s, owner Danielle French welcomed us into her kitchen where she showed us how to make focaccia bread. Her simple yet delicious recipe is below and is the perfect comfort food during these winter months. Try it with some homemade soup and you can’t go wrong. 5 cup flour
2 tsp salt
2 tsp instant yeast
2 cups water (more or less)
1/4 cup olive oil
Stir flour, yeast and olive oil together. Gradually add water and mix together until the dough loosely hangs together. Add the salt. Mix well and and put on a board and begin to knead the dough until it is smooth and elastic. Ideally, when you pull the dough apart it stretches without breaking. This may take up to 10 minutes! Let the dough rest in an oiled bowl, covered with a plastic wrap ideally overnight.
When the dough has doubled in size pat into shape. Let it sit. Preheat oven to 450. Bake 25-40 minutes until it is hollow to the touch. Enjoy!
