It’s official: deep winter is here. We’ve been through Blue Monday and a (super) blue (blood) moon, the Super Bowl, and now we’ve got a long gray stretch ahead, with little but Pancake Day to look forward to.
It’s in the depths of this long, cold season, though, that we start dreaming of abundance to come and planning the year ahead. There are gardens to sketch, and seed catalogues to pour over and decisions to make.
Here in Canada, it can be a real challenge to eat local year round, but seasonal preserving can be a real game-changer. It’s a time for taking note of which recipes worked, and which recipes need tweaking, and for making promises to make more jam this summer.
Maybe the farmer’s market offerings are getting a little ho-hum, but February is the perfect time for putting up the best intentions for the season that’s just around the corner.
In the meantime, this is our favourite pancake recipe — here’s hoping you’ve still got some of last summer’s blueberries in the freezer.
